Family property, Château Vieux Taillefer, 4.8 hectares of vineyards in Saint-Emilion Grand Cru produced three wines, Chateau Vieux Taillefer, le Pavillon de Taillefer and Blanc du Château Vieux Taillefer appellation Bordeaux. The attention in the vineyards and in the winery completely renovated in 2007, is essential to offer the tasting of wines expressing the terroir of Saint-Emilion.
The choice of harvest date is very important they need to harvest ripe, healthy grapes but not too ripe. The best way to know if the grape is ripe is to taste it. With their harvesting approach they taste the grapes every day, believing that the grape is ripe when the skin becomes thinner, there is a balance between sugar and acidity, that the glitch is brittle, but mostly they ensure that the grapes are safe and unaffected by rot.

It is a pure Merlot, from very old vines of more than 75 years on average. The Château Vieux Taillefer is a powerful, balanced wine, with a nice acidity and silky tannins, very aromatic and concentrated, it lets see in its young age notes of mocha, cacao, truffle, wild blackberry .... After a few years of conservation it will develop notes of violets, truffles, underwood ...
